Your duties as Cook at Sai Wine and Champagne Café shall include the below, you will be expected to perform all duties and exercise all such authority as may be assigned or delegated to you from time to time, and act in a manner which is reasonably necessary and proper in the interest of the Company.
Please note this is not an exhaustive list and that other matters about the kitchen will be required of you as per directive from the kitchen:
- Plan menu items in consultation with the Director
- Create recipes and prepare advanced items where necessary
- Ensure food preparation is done at the start of the shift
- Prepare shopping budget, the eve of required shopping
- Ensure food shopping is performed at the opening of business
- Ensure food is of the right quality and is produced on time
- Update inventory in POS system
- Keep accurate records of food waste and inventory
- Preparation and cooking of food
- Perform regular food inventory checks
- Make recommendations on matters concerning food preparation, food management, food prices increments, etc.
- Reduce operational and food costs by sourcing local pricing
- Keep kitchen in line with health and safety requirements
- Ensure all kitchen staff are compliant

- Prepare and/or update the food bible with ingredients, pictures, etc. to ensure consistency
- Provide training to all new kitchen staff
- Prepare menu items for private events
- Ensure knowledge of all food items in terms of preparation, ingredients, and presentation
HOURS OF WORK
Normal opening hours for Sai are:
- 12:00 midday to 10 pm (Monday to Wednesday)
- 12:00 midday to 12am (Thursday)
- 12:00 midday to 2:00 am (Friday)
- 11 am to 12 am (Saturday)
- 11 am to 10 pm (Sunday)
You are expected to work these hours, however; your manager would communicate any changes to these hours to you.
LOCATION
The primary location for the job will be at Osu, Accra; however, you may be required to perform your duties at locations to be determined by the Company from time to time.
